Healthy Recipes for Cancer Patients: BLT from Scratch

This might be the most homemade sandwich ever. Chef Coby from CARTI’s Hope Bistro shares his recipes for homemade focaccia bread, pork belly and mayonnaise to assemble a perfect BLT, all from scratch. Follow along below to get cooking!

FOCACCIA BREAD

Ingredients

  • 5 cups of 100 degree water
  • ½ oz yeast
  • ¼ cup honey
  • 3 ⅓ tbsp salt
  • 10 cups flour
  • 4 tbsp extra virgin olive oil

Instructions

  1. Combine water, yeast and honey and let sit for 10 minutes to activate yeast.
  2. Add salt and flour to mixture and combine into dough.
  3. Add olive oil to a container and spread evenly.
  4. Put oil on hands (to prevent dough from sticking) and move dough into container.
  5. Add more oil on top of the dough and spread dough until even across container.
  6. Cover and place in fridge for 24 hours.
  7. Cover a sheet pan with cooking spray and spread dough evenly across.
  8. Place in preheated 450 degree oven for 20 minutes.
  9. Let cool, then cut evenly into sandwich-sized squares.

PORK BELLY

Ingredients

  • Pork bellies
  • Salt
  • Sugar

Instructions

  1. Rub pork bellies down generously with equal amounts sugar and salt, making sure to cover all sides.
  2. Place in refrigerator for three days.
  3. After refrigerating, rinse pork bellies to remove any salt and sugar.
  4. Braise at 300 degrees until they reach an internal temperature of 170 degrees.
  5. Refrigerate in cooking liquid overnight.
  6. Cut pork belly in half, then cut into slices.
  7. Fry the sliced pork belly in a hot skillet until brown and crispy.

MAYONNAISE

Ingredients

  • 6 tbsp lemon juice
  • 3 tbsp white wine vinegar
  • 1 ½ tsp salt
  • 3 tsp ground mustard seed
  • 4 egg yolks
  • 3 cups oil

Instructions

  1. Add lemon juice, white wine vinegar, salt, ground mustard seed and egg yolks to a mixer.
  2. Cover and mix.
  3. While mixing, pour oil in slowly.
  4. Mix until creamy consistency is achieved.

After finishing each of these ingredients, spread mayonnaise onto two slices of focaccia, then add pork belly, fresh lettuce and tomato to create a fresh BLT sandwich!
